Tomato Melon Gazpacho

Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Melon Gazpacho Recipe

  • Tomatoes 4 medium

  • Musk melon peeled 1 small

  • White bread slices 1

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Fresh basil leaves 7-8

  • Tabasco sauce 1/2 teaspoon

  • Juice of 1/2 lemon

  • Extra virgin olive oil 4 tablespoons

  • Curly parsley medium bunch


Step 1

Roughly chop tomatoes. Halve the melon and remove the seeds from one half. Further cut it into big pieces.

Step 2

Put both tomatoes and melon into a mixer jar. Tear bread slice and add along with salt, black pepper powder, basil leaves, Tabasco sauce, lemon juice and ½ cup chilled water and blend till smooth.

Step 3

Add extra virgin olive oil and blend for some more time. Strain into a bowl.

Step 4

Place the curly parsley in the centre of a serving bowl and pour the soup all around it and serve.

Step 5

You can also pour into individual shot glasses. Chill and serve.
