Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Egg Soup Recipe

  • Tomatoes blanched and peeled 2-3 medium

  • Egg 1

  • Vegetable stock 4 cups

  • salt to taste

  • Black pepper powder to taste

  • Spring onion bulbs chopped 3-4

  • Beancurd (tofu) 50 grams

  • Light soy sauce 1/2 teaspoon

  • pring onion greens chopped 1 stalks


Step 1

Heat vegetable stock in a deep non stick pan. Break egg into a bowl, add salt and black pepper powder and whisk lightly.

Step 2

Heat a non stick frying pan and pour the egg mixture into it. Rotate the pan so that the egg spreads evenly all around.

Step 3

Halve the tomatoes and remove seeds. Take the pan with the egg off the heat and carefully flip the omelet. Set the pan aside.

Step 4

Chop tomatoes and add to the stock in the pan. Add spring onion bulbs and mix.Chop bean curd and add. Add salt and soy sauce and mix.

Step 5

Roll the omelet into a cylinder and cut into thin rings. Put these slices into a serving bowl.Add spring onion greens to the soup and let it simmer for 2-3 minutes. Pour the soup over the omelet rings and serve piping hot.
