Ingredients for Thai Style Chicken Breasts in Foil Recipe

  • Boneless chicken breasts sliced diagonally 2

  • Lemon grass roots 2 inches

  • Shallots peeled 10-12

  • Fish sauce 2 teaspoons

  • Crushed red chillies 1/2 teaspoon

  • Raw mango peeled and sliced 1

  • Kaffir lime leaves torn 4-5

  • Juice of ½ lemon

  • Lotus stems (bhen/bhee) cleaned thoroughly, peeled, sliced and boiled in s 2

  • Coconut milk 1/2 cup

  • Aluminium foil 6-inch squares 8

Method

Step 1

Slice lemon grass root and put into a mortar and crush with a pestle. Put it into a bowl.

Step 2

Add shallots, chicken slices, fish sauce, crushed red chillies, raw mango slices, kaffir lime leaves, lemon juice, lotus stem slices and coconut milk and mix well.

Step 3

Place 2 foil pieces one on top the other for each packet, put chicken mixture in the centre, bring the edges together to make potli and press to seal.

Step 4

Place the potlis in a pan, put some water in it so that the potlis are half submerged. Cover and cook for 15 minutes on medium heat.

Step 5

Remove from the pan and serve hot in the foil itself.
