Ingredients for Thai Chicken and Mushroom Broth Recipe

  • Chicken cooked and shredded 1 cup

  • Button mushrooms sliced 100 grams

  • Thai green curry paste 1 tablespoon

  • Chicken stock 4 cups

  • Fish sauce 1 tablespoon

  • Juice of 1 lemon

  • Lemon zest grated 1 teaspoon

  • Spring onion bulbs sliced 1/4 cup

  • Spring onion greens chopped 2 tablespoons


Step 1

Pour chicken stock into a deep non-stick pan and put it on heat. Add green curry paste, fish sauce, lemon juice and lemon zest, mix well and bring it to a boil.

Step 2

Add mushrooms and spring onion bulbs, mix well, cover and simmer for two minutes.

Step 3

Add chicken and spring onion greens and simmer for two minutes more.

Step 4

Sever hot.
