Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Thai Chicken Rice Recipe

  • Boneless Chicken cut into 1 cm pieces 400 grams

  • Basmati Rice soaked 1 1/2 cups

  • Oil 2 tablespoons

  • Shallots chopped 4 tablespoons

  • Ginger chopped 1 teaspoon

  • Curry powder 2 tablespoons

  • Garlic chopped 1 teaspoon

  • Thai red curry paste 1 tablespoon

  • Salt to taste

  • Coconut milk 1 cup

  • Fresh red chillies 2

  • Lemon juice 1 tablespoon

Method

Step 1

Heat oil in a rice cooker, add shallots, ginger and garlic. Mix and sauté for 1 minute. Add red curry paste and chicken and mix. Add curry powder, salt and 2 cups water and mix well.

Step 2

Add rice and mix well. Add coconut milk and mix again.Diagonally slice red chillies and add along with lemon juice. Mix well, cover and cook till done. Serve hot.
