Ingredients for Sweetcorn Crabmeat Soup Recipe

  • Sweet corn (cream style) 2 1/2 cups

  • Crab meat cooked 3 tablespoons

  • Chicken stock 3 cups

  • Cornflour/ corn starch 2 tablespoons

  • Salt to taste

  • White pepper powder 1/2 teaspoon

  • Sugar 1 tablespoon

  • Egg whites 2

  • Spring onion greens chopped for garnish

Method

Step 1

Boil chicken stock in a non stick pan. Mix cornstarch with ¼ cup water till smooth. Mix salt, pepper powder, ½ tbsp sugar and little water in another bowl.

Step 2

Add cream style corn to the boiling stock and mix well.Add sugar-pepper mixture and cornstarch mixture.

Step 3

Mix well and cook for 2-3 minutes.

Step 4

Adjust salt and add remaining sugar. Mix well and cook till comes to a boil.Beat egg whites and add. Mix well.

Step 5

Add crabmeat and mix again. Cook for 1 minute.

Step 6

Serve piping hot garnished with chopped spring onion greens.
