Ingredients for Spicy Caribbean Chicken Skewers Recipe

  • Boneless chicken cut into cubes 250 grams

  • Birds eye chillies finely chopped 2-3

  • Orange juice 2 tablespoons

  • Juice of 1 lemon

  • Rum Dark 2 tablespoons

  • Soy sauce 2 tablespoons

  • Ginger finely chopped 1 inch

  • Crushed black peppercorns to taste

  • Salt to taste

  • Garlic chopped 1 tablespoon

  • Fennel seeds (saunf) 1 teaspoon

  • Vinegar 1 tablespoon

  • Oil for greasi for basting

  • Spring onion greens chopped for garnishing


Step 1

Take orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add chicken and mix well. Refrigerate to marinate for 2 hours.

Step 2

Preheat an electric griller and grease with some oil.

Step 3

Skew marinated chicken cubes onto the satay sticks and reserve the leftover marinade for basting.

Step 4

Place the skewers on preheated griller and grill, rotating the sticks and basting with the reserved marinade and some oil, till golden from all sides and fully cooked.

Step 5

Serve hot garnished with spring onion greens.
