Spiced Carrot Soup Shots

If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Spiced Carrot Soup Shots Recipe

  • Carrots peeled & finely chopped 2-3 medium

  • Red chilli chopped 1

  • Black peppercorns 4-5

  • Extra virgin olive oil 2 tablespoons

  • Onion sliced 1 medium

  • Garlic chopped 1 teaspoon

  • Potato peeled & finely chopped 1 small

  • Salt to taste

  • Fresh coriander leaves a few sprigs


Step 1

Heat 1 tbsp olive oil in a deep non stick pan, add onion and garlic and saute for 1 minute. Add black peppercorns, potato and carrot and saute for another minute. Add salt and mix. Add fresh red chilli and mix. Add 2 cups water and mix.

Step 2

Heat remaining olive oil in a non stick pan. Finely chop a few sprigs of fresh coriander leaves. Cover the pan with carrots and cook till soft. Cool and transfer into a blender jar.

Step 3

Add coriander leaves to the other pan and switch off the heat. Blend the carrot mixture till smooth. Add a little water to adjust the consistency.

Step 4

Transfer the mixture into a jar and then pour into shot glasses. Garnish with the coriander leaves in extra virgin olive oil and serve.
