Ingredients for Shortbread Cookies Recipe

  • Refined flour (maida) 250 grams for dusting

  • Vanilla pod fresh 1

  • Eggs 2

  • Butter 125 grams

  • Castor sugar (caster sugar) 90 grams + for sprinkling

  • Salt a pinch


Step 1

Preheat oven at 180ºC.

Step 2

Slit the vanilla pod, scrape off the beans and place in a bowl. Add eggs and whisk well. Set aside.

Step 3

Combine butter and castor sugar in a bowl of a planetary mixer. Fit the bowl and cream on medium speed, adding the egg mixture slowly.

Step 4

Add flour and salt and process again till well mixed and a dough is formed.

Step 5

Dust the worktop with some flour. Roll out the dough into ½ inch thick sheet. Place a medium size plate on it and cut out a disc.

Step 6

Make marks on the disc using a palette knife without cutting through, to form wedges. Press the edges with your thumb to give impressions. Place the disc on a baking tray and refrigerate for 1 hour.

Step 7

Sprinkle castor sugar on the disc, put the tray in the preheated oven and bake for 20 minutes. Remove from heat and cool.
