How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Pudding With Figs And Dates Recipe

  • Basmati Rice 1 cup

  • Dried Figs 1/4 cup

  • Dried dates (chuhare) chopped 1/4 cup

  • Milk 2 cups

  • Cinnamon 1 inch sti

  • Lemon rind grated 1/4 teaspoon

  • Sugar 1 1/2 tablespoons

  • Rose water 1 teaspoon


Step 1

Heat rice with milk in a non stick pan on low heat till it comes to boil. Add cinnamon and stir. Cook till it thickens and rice is done.Heat another non stick pan, add figs, dates and ½ cup water, mix well and cook. Add lemon rind and mix well. Cook till soft and dry.

Step 2

Discard cinnamon from rice mixture and add sugar. Mix well and cook for 2-3 minutes.Mash figs and dates lightly.

Step 3

Take off rice-milk mixture from heat and add rose water. Mix well.Put rice-milk mixture into individual bowls. Place 2 tbsps of cooked dried fruits on top. Serve warm or chilled.
