How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Noodle Fritters Recipe

  • Rice vermicelli 200 grams

  • Oil for deep-frying

  • Fresh red chillies finely chopped 1-2

  • Fennel seeds (saunf) roasted and crushed 1 teaspoon

  • Cumin seeds roasted and crushed 1 teaspoon

  • Crushed black peppercorns to taste

  • Salt to taste

  • Onion finely chopped 1 small

  • Egg white 1

  • Sweet chilli sauce to serve


Step 1

Take vermicelli in a bowl. Add warm water, cover with cling film and keep till vermicelli softens.

Step 2

Heat sufficient oil in a pan.

Step 3

Strain the soaked vermicelli into a bowl and chop roughly.

Step 4

Add red chillies, crushed fennel seeds, crushed cumin seeds, crushed peppercorns, onion and salt and mix. Add egg white and mix well.

Step 5

Put spoonful of vermicelli mixture directly into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.

Step 6

Serve hot with sweet chilli sauce.
