Ingredients for Rajgira Fruit Pizza Recipe

  • Orange 1 medium

  • Amaranth seeds (Rajgira), popped ½ cup

  • Kiwi peeled and cut into slices 1

  • Muskmelon wedge, cut into slices 1

  • Dried Berries 6-8

  • Coconut oil 1½ tablespoons

  • Jaggery (gur) chopped ½ cup

  • Salt a pinch

  • Green cardamom powder ½ teaspoon

  • Hung yogurt ½ cup

  • Walnuts toasted and crushed ¼ cup


Step 1

Separate orange segments and reserve the zest.

Step 2

Heat coconut oil in a non-stick pan. Add jaggery and salt, mix and cook till the jaggery melts.

Step 3

Add amaranth and mix well. Add cardamom powder and mix well.

Step 4

Divide the mixture immediately into 4 equal portions, spreading into small discs onto a silicon sheet. Set aside for 15-20 minutes.

Step 5

Mix together yogurt and orange zest in a bowl.

Step 6

Spread a spoonful of yogurt mixture over each disc. Arrange kiwi slices, orange segments and melon slices, top with berries and sprinkle walnuts.

Step 7

Serve immediately.
