Ingredients for Quinoa and Vegetable Patties Recipe

  • Quinoa roasted ½ cup

  • Potatoes boiled, peeled and mashed 2 large

  • Garlic cloves minced 2

  • Carrot peeled and grated 1 small

  • Spring onions with greens chopped 2

  • Fresh spinach leaves (palak) chopped 1 cup

  • Mixed herbs 1 teaspoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Parmesan cheese ¼ cup

  • Cornflour/ corn starch ¼ cup

  • Olive oil to deep fry


Step 1

Combine the potatoes, garlic, carrot, spring onion with greens, spinach, mixed herbs, salt and crushed peppercorns in a bowl and mix well. Add the parmesan cheese and mix well.

Step 2

Take the cornstarch in a bowl. Add some water and mix to make a smooth slurry.

Step 3

Divide the prepared vegetable mixture into eight equal portions and shape them into patties.

Step 4

Dip the patties in the slurry and coat with the quinoa.

Step 5

Heat some oil in a non-stick pan. Place the prepared patties on it and shallow-fry till evenly done and golden from both sides.

Step 6

Serve hot with tomato ketchup.
