Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Potato Halwa Recipe

  • Potatoes peeled and grated 4 medium

  • Milk 1/2 cup

  • Sugar 1/2 cup

  • Saffron (kesar) 3-4 strands

  • Green cardamom powder 1/4 teaspoon

  • Ghee 4 teaspoon

  • Cashewnuts chopped 5-6

  • Raisins 1 tablespoon

Method

Step 1

Wash the grated potatoes till the water becomes clear. Drain thoroughly.

Step 2

Add milk to the grated potatoes and pressure cook till one whistle. Make a one string consistency syrup with sugar and one-fourth cup of water.

Step 3

Remove the scum that rises to the top and discard. Add saffron, green cardamom powder and cooked potatoes to the sugar syrup and cook till a halwa consistency is reached.

Step 4

Heat ghee in a small pan and sauté cashewnuts and raisins. Add it to the potato halwa and mix well. Serve hot.
