Ingredients for Polenta Pesto Chicken Recipe

  • Boneless chicken breasts cut into thick strips 400 grams

  • Polenta 1 cup

  • Pesto sauce 5 tablespoons

  • Salt to taste

  • Lemon juice 2 teaspoons

  • Eggs beaten 2

  • Oil for deep-frying

Method

Step 1

Put chicken in a bowl, add pesto sauce, salt and lemon juice, mix and set aside to marinate for thirty to forty minutes.

Step 2

Spread polenta evenly on a plate. Heat sufficient oil in a kadai.

Step 3

Dip chicken pieces in the beaten eggs and roll in polenta. Slide them into the hot oil and deep-fry till golden brown and crisp.

Step 4

Drain on absorbent paper and serve hot.
