Ingredients for Pistachio Lava Cupcakes Recipe

  • Pistachios paste ½ cup

  • Dark chocolate ganache 1 cup

  • Refined flour (maida) 2 cups + ¼ cup

  • Eggs 2

  • Castor sugar (caster sugar) ½ cup

  • Vanilla essence 1 teaspoon

  • Butter ¼ cup

  • Baking powder 1 teaspoon

  • Milk 1 tablespoon


Step 1

Preheat oven to 180° C. Line a baking tray with individual cupcake moulds.

Step 2

Break eggs into a bowl and whisk till light and fluffy with an electric beater. Add castor sugar and whisk.Add vanilla essence and whisk. Add butter and whisk well.

Step 3

Sieve in together flour and baking powder and whisk. Add pistachio paste and whisk. Add milk and whisk well to a smooth batter.

Step 4

Fill the batter into a piping bag with and pipe out into cupcake moulds upto ½. Put in a scoop of ganache in each mould and pipe out remaining batter on top.

Step 5

Place the tray in preheated oven and bake for 15 minutes.

Step 6

Demould and serve hot.
