Ingredients for Pina Colada Yogurt Recipe

  • Hung yogurt 1 cup

  • Canned pineapple 4 slices

  • Brown sugar 3 tablespoons

  • Fresh coconut scraped 1/2 cup

  • Powdered sugar 2 tablespoons

  • Desiccated coconut 1/4 cup


Step 1

Heat a non-stick pan. Chop pineapple slices and put in the pan. Add 2 tbsps brown sugar and mix. Add a little water and let it cook on medium heat till soft.

Step 2

Dry roast scraped coconut in a non-stick pan on low heat. Meanwhile add powdered sugar to hung yogurt and whisk till well incorporated. Add desiccated coconut to toasted coconut and continue to roast till lightly browned.

Step 3

Take stemmed glasses and put the pineapple mixture at the base. Put some sweetened yogurt over the pineapple and mix very lightly taking care that it does not get completely mixed. Sprinkle the roasted coconuts and a little brown sugar on top and chill in a refrigerator .
