The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Pethe Ki Barfi Recipe

  • Petha 250 grams

  • Khoya 250 grams

  • Sugar 125 grams

  • Saffron (kesar) 6-7 strands

  • Milk 1 tablespoon

  • Green cardamom powder 1/4 tablespoon

  • Pure ghee 1 tablespoon

  • Silver warq 1-2 sheet

Method

Step 1

Grate the petha thickly. Cook on low heat till all the syrup dries up. Grease a thali. Knead the khoya till smooth.

Step 2

Add sugar and the petha and cook on medium heat, stirring continuously till the mixture forms a mass. Add saffron dissolved in warm milk and green cardamom powder and mix well.

Step 3

Pour the mixture into a greased tray and smoothen the surface. Cut into diamonds when cold. Decorate with silver warq and serve.
