Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Pan Fried Mushrooms Recipe

  • Button Mushrooms quartered 20-24

  • Porcini Mushrooms

  • Porcini Mushrooms optional 1/2 cup

  • Oyster mushrooms optional 1/2 cup

  • Red capsicum 1/2 inch pieces 1 small

  • Yellow capsicum 1/2 inch pieces 1 small

  • Olive oil 1 tablespoon

  • Onion cut into ½ inch cubes 2 medium

  • Garlic crushed 3 cloves

  • Soy sauce 1 tablespoon

  • Red chilli sauce 1 tablespoon

  • Vinegar 1/2 tablespoon

  • Dried thyme 1/2 teaspoon

  • Salt to taste

  • Black peppercorns crushed 8-10

  • Fresh basil leaves roughly torn 7-8


Step 1

If using, porcini and oyster mushrooms, soak in lukewarm water for twenty minutes. Drain. Wash well and set aside.

Step 2

Heat the oil in a large pan. Add the onions and sauté over medium heat till translucent. Add the garlic and stir-fry for a minute.

Step 3

Add the mushrooms and red and yellow capsicums and sauté on high heat for three minutes. Add the soy sauce, red chilli sauce and vinegar and sauté for another two minutes.

Step 4

Add the thyme, salt and crushed peppercorns. Remove from heat, stir in basil and serve hot.
