The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Thepla Recipe

  • Spinach 1/2 cup

  • Whole wheat Flour 2 cups

  • Green chillies chopped 2-3

  • Garlic chopped 3-4 cloves

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Asafoetida a pinch

  • Salt to taste

  • Oil as required


Step 1

In a bowl combine together whole wheat flour, spinach puree, green chillies, turmeric powder, red chilli powder, asafoetida, salt and sufficient water and knead a soft dough.

Step 2

Divide the dough into equal portions and roll them into thin theplas. Heat a non stick tawa and cook till golden brown on both the sides. Serve hot.
