Ingredients for Orange and Broken Wheat Salad Recipe

  • Oranges peeled, segments separated and seeded 2 medium

  • Broken wheat (dalia/lapsi) soaked for 15 minutes and drained 4 tablespoons

  • Spring onions chopped 4

  • Fresh parsley chopped 1 cup

  • Fresh mint leaves chopped 1 tablespoons

  • Tomato seeded and cut into small pieces 1 medium

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Sugar 1 teaspoon

  • Black pepper powder 1/4 teaspoon

  • Extra virgin olive oil 2 teaspoons

  • black sesame seeds (kale til) toasted 1 tablespoon

Method

Step 1

Place the drained broken wheat in a deep bowl. Add the chopped spring onion bulbs and mix, crushing the onions slightly with your fingers.

Step 2

Add the chopped parsley and mix well.

Step 3

Add the chopped spring onion greens and mint leaves. Add tomato pieces to the salad. Add the orange segments and toss well.

Step 4

To make the dressing, mix together the lemon juice, salt, sugar and pepper powder. Pour over the salad and mix well. Drizzle the extra virgin olive oil and toss.

Step 5

Chill and serve garnished with the toasted black sesame seeds.
