How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Neer Dosa Recipe

  • Rice 2 cups

  • Oil to taste

  • Oil to shallow fry

Method

Step 1

Wash and soak rice in four cups of water for twelve hours. Drain and grind to a fine paste using half a cup of water.

Step 2

Add salt and three and a half cups of water to get a flowing consistency.

Step 3

Heat the dosa tawa and pour just enough oil to grease it. Stir and pour a ladle full of batter starting from the outer edge moving towards the centre so that it spreads in a thin, even layer.

Step 4

Do not use the ladle to spread it. Cover and cook for ten to fifteen seconds. Remove carefully, fold into a triangle and serve immediately.
