Ingredients for Mutton Bhatinda Recipe

  • Mutton cut into small pieces on the bone 800 grams

  • Yogurt 4 tablespoons

  • Cumin seeds 1 tablespoon

  • Bay leaves 2

  • Cinnamon 2 one inch sticks

  • Cloves 6-8

  • Black cardamoms 4-5

  • Green cardamoms 4-5

  • Black peppercorns 1 tablespoon

  • Oil 3-4 tablespoons

  • Onions 3

  • Ginger-garlic paste 2 tablespoons

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Green chilli broken 3

  • Coriander seeds 2 tablespoons

  • Fresh coriander leaves 2 tablespoons

Method

Step 1

Heat a kadai. Add coriander seeds, cumin seeds, bay leaves, cinnamon, cloves, black cardamoms, green cardamoms, black peppercorns and dry roast on low heat. Cool and grind coarsely.

Step 2

Heat oil in a kadai. Finely slice the onions and sauté till golden. Add mutton and mix well. Sprinkle a little water, so that the onions do not burn and continue to sauté.

Step 3

Add ginger-garlic paste and sauté till the colour of the mutton changes. Add salt and mix. Add 1½ cups water, cover and cook, stirring at regular intervals, for 20-25 minutes or till the mutton is tender.

Step 4
