Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Tikki Recipe

  • Button mushrooms 12-15

  • Potatoes

  • Oil 2 tablespoons

  • Onions chopped 3 medium

  • Potatoes boiled and mashed 4 large

  • Green chillies chopped 2-3

  • Fresh coriander leaves chopped 2 tablespoons

  • Salt to taste

  • Semolina (rawa/suji) 1 cup


Step 1

Boil mushrooms in water for about ten minutes. Drain and chop them finely.

Step 2

Heat oil in a pan. Add onions and sauté till soft and translucent. Add mushrooms and sauté till all the moisture gets evaporated.

Step 3

Take potatoes in a bowl. Add green chillies to the mushrooms and mix. Add this mixture to the potatoes and mix well. Add coriander leaves and salt and mix.

Step 4

Heat oil in a pan. Keep semolina in a plate. Shape the mixture into tikkis. Roll them in semolina, press slightly and shallow fry till golden.

Step 5

Serve hot.
