Ingredients for Medley Of Vegetables Recipe

  • Button Mushroom quartered 6-8

  • Spring onions 2 slices

  • Carrot,1/2 inch cubes 1

  • Cauliflower 1/4 small

  • Green peas 1/4 cup

  • French beans ,diamond shaped 5-6

  • Baby potatoes,boiled 8-10

  • Orange juice 1 1/2 cups

  • Carrot juice 3/4 cup

  • Tomato ketchup 3 tablespoons

  • Broccoli 5-6 floret

  • Fresh thyme,crushed a few sprigs

  • Salt to taste

  • Red chilli flakes 1 teaspoon

  • Spring onion greens,chopped 2

  • Lemon juice 2 teaspoons

Method

Step 1

Heat a non-stick pan slightly and pour orange juice into it. Add mushrooms and cook for a minute. Add spring onions, carrot, cauliflower florets, peas and French beans. Add half of the baby potatoes cut into halves, carrot puree and tomato ketchup. Stir and cook for few minutes.
