Ingredients for Mango And Cherry Soft Serve Recipe

  • Mangoes chopped 1 1/2 cups

  • Vanilla Icecream seeded 1 cup

  • Sponge cake (round) 400 grams

  • Fresh cream 1 cup

  • Castor sugar (caster sugar) 1/2 cup

  • Vanilla ice cream 500 grams

  • Mango juice 1/4 cup


Step 1

Slice sponge cake horizontally into two equal pieces. Whip fresh cream with castor sugar till it forms soft peaks. Soften vanilla ice cream.

Step 2

Sprinkle mango juice on both layers of sponge. Evenly spread cherries and mango on one sponge layer. Evenly spread softened ice cream over the fruits and cover with the other sponge layer.

Step 3

Freeze this for at least an hour and top it with sweetened whipped fresh cream and cut into eight slices. Decorate with mango pieces and sweetened cream rosette.

Step 4

Serve with fresh cherries and decorate with sliced mango.
