The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Malai Sak Recipe

  • Spinach 3 bunches

  • Fresh Cream 3-4

  • Ginger 1 inch piece

  • Butter 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Coriander powder 1 teaspoon

  • Salt to taste

  • Fresh cream 1/2 cup


Step 1

Remove stalks, wash and finely chop spinach leaves. Wash remove stems and finely chop green chillies. Peel, wash and finely chop ginger.

Step 2

Heat butter in a kadai, add cumin seeds and when they change colour, add the chopped green chilies and ginger and fry for half a minute.

Step 3

Add chopped spinach and sauté on medium heat for two minutes. Add coriander powder and salt and cover and cook on low heat till spinach is dry and butter surfaces on top.

Step 4

Remove from heat, add fresh cream, stir and serve hot.
