Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Lavash Recipe

  • Refined Flour 2½ cups

  • Sugar 1 teaspoon

  • Egg 1 white +

  • Salt 1 tablespoon

  • Butter 2 tablespoon

  • Oil ½ tsp + fo

  • black sesame seeds (kale til) for sprink

Method

Step 1

Mix refined flour, sugar, egg white, salt and butter in a bowl. Add sufficient water and knead into a soft dough. Add oil and knead again. Cover with damp muslin cloth and set aside for 10-15 minutes.

Step 2

Preheat oven to 180º C.

Step 3

Divide the dough into equal portions, shape them into balls and rest for 5-7 minutes. Roll out the balls into thin discs.

Step 4

Grease baking tray with oil, place the discs on it, brush them with egg white and sprinkle black sesame seeds on top. Place the tray in the preheated oven and bake for 10-12 minutes.

Step 5

Remove the tray from the oven, roughly tear lavashandplace them on a serving plate.Serve with muhammara dip.
