Ingredients for Kurkuri Arbi Recipe

  • Colocassia (arbi) boiled and peeled 500 grams

  • Oil 1 tablespoon

  • Carom seeds (ajwain) 2 teaspoons

  • Asafoetida a big a pinch

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Lemon juice 1 teaspoon

  • Chaat masala 1 teaspoon

Method

Step 1

Halve the colocassia vertically and flatten each piece between your palms.

Step 2

Heat sufficient oil in a kadai and deep-fry the colocassia till golden brown.

Step 3

Drain on absorbent paper.

Step 4

Heat one tablespoon oil in a non-stick pan.

Step 5

Add carom seeds, asafoetida, salt and red chilli powder and stir.

Step 6

Add the fried colocassia slices and mix well.

Step 7

Cover and cook on low heat for five minutes.

Step 8

Add coriander leaves, lemon juice and chaat masala. Mix well. Serve hot.
