How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Khatti Kheer (redu) Recipe

  • Cooked Rice 2 cups

  • Yogurt 1 cup

  • Cumin seeds 1/4 teaspoon

  • coriander leaves 1/2 teaspoon

  • Fenugreek seeds (methi dana) 1/4 teaspoon

  • Garlic chopped 2-3 cloves

  • Onion chopped 2 medium

  • Ginger chopped 1/2 inch piece

  • Green chilli chopped 1

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 1 tablespoon


Step 1

Heat oil in a non-stick pan. Add cumin seeds, coriander seeds, fenugreek seeds and saute for a minute.

Step 2

Add garlic, onion, ginger and green chilli and saute till the onions get brown. Add turmeric powder and salt and mix well. Add yogurt and mix well. Add rice and mix well. Serve it garnished with coriander leaves.
