Ingredients for Khamang Kakdi Recipe

  • Cucumber peeled 3 medium

  • Peanuts roasted 1/2 cup

  • Scraped coconut 1/3 cup

  • Green chillies cut into 2 inch pieces 2

  • Lemon juice 1 tablespoon

  • Sugar 1 teaspoon

  • Salt

  • Fresh coriander leaves chopped 1/2 cup

  • For tempering

  • Pure ghee 1 tablespoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1/4 teaspoon

Method

Step 1

Halve, remove seeds and finely chop cucumbers. Crush roasted peanuts to a coarse powder.

Step 2

Mix cucumbers with peanut powder, coconut, green chillies, lemon juice and sugar.

Step 3

Heat pure ghee in a small non stick pan, add mustard seeds and as they begin to splutter add cumin seeds.

Step 4

Stir briefly and add this tempering to the cucumber mixture and mix well.

Step 5

Add salt, mix and serve immediately, garnished with coriander leaves.
