Ingredients for Honey and Lemon Chicken on Rice Recipe

  • Chicken 1

  • Honey 2 tablespoons

  • Lemons 3

  • Cooked brown rice 1/2 cup

  • Salt to taste

  • Red chilli flakes as required

  • Oil 3 tbsps +

  • shallots peeled 4-5

  • Ginger chopped 1 teaspoon

  • Orange juice 2 cups

  • Carrot peeled 1 medium

  • A curly parsley sprig

Method

Step 1

Slice 2 lemons into thick roundels. Make light gashes on the chicken breast on both sides. Sprinkle salt and red chilli flakes on both sides.

Step 2

Heat 1 tbsp oil in a non-stick grill pan and place 6 lemon roundels in 2 rows. Place the chicken breast over them. Squeeze the juice of ½ lemon and let it cook.

Step 3

Halve the shallots. Heat 2 tbsps oil in a non-stick wok, add shallots and ginger and saute.

Step 4

Turn the chicken breast over, add 2 tbsps water and let it cook.

Step 5

Add orange juice to the wok. Cut carrot into roundels and halve them and add to the wok and cook.

Step 6

Add salt, honey, red chilli flakes, juice of ½ lemon and mix. Add ½ cup cooked brown rice and mix and let it get heated through.

Step 7

Drizzle a little oil over the chicken breast and cook till both sides are golden. Remove from the pan and thickly slice diagonally without cutting through.

Step 8

Transfer the rice into a serving plate, place the chicken over it. Garnish with a sprig of curly parsley and grilled lemon slices and serve hot.
