Ingredients for Grilled Tofu Sandwich Recipe

  • Tofu grated 1/2 cup

  • Brown bread slices 8

  • Paneer (cottage cheese) grated 1/4 cup

  • Extra virgin olive oil to cook

  • Tomato chilli paste

  • Olive oil 1 tablespoon

  • Onion chopped 1 medium

  • Cherry tomatoes halved 10

  • Salt to taste

  • Dried red chillies broken 3

  • Roasted peanuts 2 tablespoons


Step 1

Heat oil in non stick pan, add onion and saute.

Step 2

Put paneer in a bowl, add tofu and mix.

Step 3

When onion becomes transluscent, add cherry tomatoes, salt and red chillies and sautetill tomatoes soften. Cool slightly.

Step 4

Put peanuts in a mixer jar, add tomato mixture and blend till smooth. Add this to the paneer-tofu mixture and mix well.

Step 5

Spread a thick layer of this mixture on 4 bread slices, cover each with bread slice. Brush the inside of the sandwich toaster with extra virgin olive oil, place a sandwich in it, close the toaster and toast over medium heat till golden and crisp on outside.

Step 6

Cut into triangles and serve hot.
