Ingredients for Frozen Fruit Pudding Recipe

  • Chocolate Icecream softened 500 millilitres

  • Chickoo pureed 1/2 cup

  • Glazed cherries chopped 1/2 cup

  • Apricots,chopped seedless 1/2 cup

  • Raisins 3 tablespoons

  • Rum 1 tablespoon

  • Cocoa powder optional 2 tablespoons

  • Roasted almonds whole 8-10

Method

Step 1

Combine ice cream, chikoo puree, cherries, apricots, raisins and rum. Pour into a greased and lined 750 millitre capacity pudding basin.

Step 2

Freeze for two to three hours or until firm. To serve, demould, dust with cocoa powder and garnish with roasted almonds. Cut into wedges and serve.
