Preheat oven to 180° C.
Break eggs into a bowl, add capsicums, salt, crushed peppercorns and milk and whisk well.
Cover the base of two cookie cutters with aluminium foil and place them on a baking tray. Pour the mixture into both, place tray in the preheated oven and bake till egg gets cooked.
Halve the burger buns horizontally.
Heat a few drops oil in a non-stick pan. Place buns on it and toast till crisp.
To make the spread, mix mayonnaise and tomato ketchup in a bowl. Add jalapeno and Tabasco sauce and mix well.
Heat half teaspoon oil in another non-stick pan. Add tomato slices and onion roundels and sauté lightly for a minute on each side. Place them on a plate.
Apply some spread on the bottom halves of the toasted buns. Place some torn lettuce leaves on top and drizzle some more spread on top. Place a sautéed tomato slice and onion roundel on each and sprinkle little salt.
Halve the baked egg horizontally and place each half on the assembled buns. Cover with the top toasted halves of the buns.
