Ingredients for Curried Egg and Potato Salad Recipe

  • Boiled eggs boiled and peeled 6

  • Curry powder boiled and peeled 2

  • curry powder 1 teaspoon

  • iceberg lettuce soaked in water 1 head

  • lollorosso lettuce soaked in water 1 head

  • romaine lettuce soaked in water 1 head

  • mayonnaise sauce 4 tablespoons

  • red chilli sauce with vinegar 1½ tablespoons

  • mustard sauce 1 teaspoon

Method

Step 1

Drain and tear all the lettuce leaves and put into a bowl. Add 2 tbsps mayonnaise and mix with hands. Transfer them into a serving bowl.

Step 2

Cut potatoes into big cubes and put into the bowl. Quarter the eggs and keeping aside 2-3 pieces for garnish, put the rest in the bowl.

Step 3

Mix 2 tbsps mayonnaise, red chilli sauce, mustard sauce, curry powder in a another bowl and add it to the egg-potato mixture. Mix well.

Step 4

Put this salad over the lettuce, garnish with the reserved egg pieces and a fresh red chilli flower. Serve immediately.
