Ingredients for Cucumber and Spinach Pancakes with Greek Salad Recipe

  • Cucumber peeled 2 medium

  • Spinach shredded 1 medium bunch

  • Rice flour 1/2 cup

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Black pepper powder 1/2 teaspoon

  • Yogurt 1/4 cup

  • Turmeric powder 1/4 teaspoon

  • Olive oil for cooking

  • Feta cheese 50 grams

  • Greek salad

  • Cucumbers peeled 2 medium

  • Tomatoes 2

  • Onion 1 medium

  • Juice of 1 lemon

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Green olives pitted 11-12

  • Olive oil 1 tablespoon

  • Red bell pepper cut into dices 1

  • Black olives pitted 11-12

  • Iceberg lettuce leaves 5-6


Step 1

Grate the cucumbers and put in a bowl. Add salt, ¼ tsp red chilli powder, ¼ tsp pepper powder and mix well. Set aside for 5 minutes.

Step 2

Squeeze out the moisture from the cucumber mixture and reserve the liquid.

Step 3

Add spinach, yogurt, rice flour to the cucumber and mix well. Add turmeric powder, salt, remaining red chilli powder, remaining pepper powder and sufficient water. Mix well and make a smooth batter. Set aside for 10 minutes.

Step 4

To make Greek salad, cut the cucumbers into dices. Cut tomato and onion into dices and place all these vegetables in a bowl. Add lemon juice, salt, pepper powder, reserved liquid and mix well.

Step 5

Add broken green olives, olive oil and mix well. Add red bell pepper, broken black olives and toss well.

Step 6

Heat ½ tsp olive oil in a non-stick pan. Pour a ladleful of batter and spread into a pancake. Drizzle little olive oil on the sides and let the underside cook. Flip and cook the other side also till evenly done. Similarly, make other pancakes.

Step 7

Add hand torn lettuce leaves in the salad and toss well.

Step 8

Place the prepared salad on a serving plate. Fold the pancakes and place them along the salad. Crumble feta cheese and add on top of the salad and serve immediately.
