Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Couscous Tabbouleh Recipe

  • Couscous 1 cup

  • Cherry tomatoes 10

  • Crushed black peppercorns to taste

  • Salt to taste

  • Cucumber peeled

  • Extra virgin olive oil 1 tsp + 2

  • Spring onion bulbs 2

  • Fresh flat leaf parsley sprigs 5-6

  • Fresh curly parsley sprigs 3-4

  • Fresh mint leaves 15-20

  • Juice of 2 lemons

Method

Step 1

Heat 1 cup water in a deep non-stick pan. Add salt, crushed peppercorns and couscous, cover and cook for 2 minutes. Switch off heat and cool to room temperature.

Step 2

Slice spring onion bulbs. Deseed cucumber and roughly chop.

Step 3

Take couscous in a bowl. Add 1 tsp olive oil and refrigerate to chill.

Step 4

Cut cherry tomatoes into halves. Roughly chop flat and curly parsley sprigs. Roughly chop mint leaves.

Step 5

Place all the cut vegetables alongwith parsley and mint in a large bowl. Add lemon juice, salt, crushed peppercorns and 2 tbsps olive oil and toss well.

Step 6

Add couscous and mix well.

Step 7

Serve immediately.
