Ingredients for Chicken and Roasted Pepper Ragout Recipe

  • Chicken drumsticks 8-10

  • Red bell pepper roasted and cut into cubes 2 medium

  • Salt to taste

  • Crushed black peppercorns to taste

  • Paprika smoked 2 tablespoons

  • Lemon zest of ½ lemon

  • Olive oil 1 tablespoon + as required

  • Onions chopped 3 medium

  • Garlic chopped 1 tablespoon

  • Refined flour (maida) 1 tablespoon

  • Chicken stock 1½ cups

  • Fresh cream ¼ cup

  • Fresh parsley chopped 2 teaspoons

Method

Step 1

Take the chicken drumsticks in a bowl. Add salt, crushed peppercorns, one tablespoon paprika, one teaspoon cumin powder and lemon zest, mix well and set aside to marinate.

Step 2

Heat olive oil in a non-stick pan. Add onions and sauté till translucent. Add garlic, mix and sauté till onions turn golden.

Step 3

Heat some olive oil in another non-stick pan. Add the marinated chicken drumsticks and sear till evenly golden from both sides.

Step 4

Add flour to the onions, mix and sauté for a minute. Add the chicken stock, stir and bring to a boil.

Step 5

Add the remaining paprika, remaining cumin powder, salt and crushed peppercorns and mix well. Add the seared chicken drumsticks, mix well and cook till the chicken is fully done.

Step 6

Add the peppers and mix. Add the cream and parsley and mix well.

Step 7

Serve hot.
