Step 1
Take five cups of water in a deep microwave casserole. Add one tablespoon of oil and salt to taste, cover and heat on Microwave HIGH (100%) for ten to twelve minutes.
Step 2
Add the spaghetti, cook, uncovered, on Microwave HIGH (100%) for four minutes. Drain the water, refresh pasta in cold water, add the remaining oil and mix gently. Each strand of pasta should remain separated from the other. Keep aside.
Step 3
Take two tablespoons of olive oil, garlic, onion and half the basil leaves in a microwave bowl and cook, uncovered, on Microwave HIGH (100%) for five minutes. Add tomato puree, salt and pepper powder and cook, covered, on Microwave HIGH (100%) for five minutes.
Step 4
In another microwave bowl take the remaining two tablespoons of olive oil, add chicken, mushrooms and capsicums and cook, covered, on Microwave HIGH (100%) for three minutes. On the tomato sauce spread a layer of spaghetti, followed by a layer of the chicken and vegetable mixture.
Step 5
Top it with the remaining basil leaves and cheese. Gratinate, uncovered, on Microwave HIGH (100%) for three minutes or alternatively Grill (TOP) for five minutes.
