When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Salona Recipe

  • Chicken cut into 1 inch pieces on the bone 800 grams

  • Potato

  • Oil 2 tablespoons

  • Onions coarsely chopped 3 medium

  • Potatoes cut into cubes 2 medium

  • Green chillies cut into ¼ inch pieces 4

  • Garlic crushed 3 cloves

  • Yellow Zucchini peeled and cut into thick slices 2 small

  • Eggplants/ brinjals peeled and cut into cubes 2 medium

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Curry powder 1 teaspoon

  • Salt to taste

  • Dried lemon halved 1

  • Tomato puree 1/4 cup

  • Chicken stock 2 cups

  • Green capsicum diced 1 medium


Step 1

Heat the oil in a deep non stick pan.

Step 2

Add onions and sauté till golden. Add the potatoes, green chillies and garlic and stir. Sauté for two minutes and then add the zucchini, eggplants and stir. Sauté for two minutes.

Step 3

Add the turmeric powder, coriander powder and curry powder and mix. Add the chicken, salt and the dried lemon halves and stir. Add tomato puree and mix. Add the chicken stock or water and mix. When it comes to a boil, add green capsicum and stir.

Step 4

Cover and cook on medium heat for half an hour.

Step 5

Serve hot.
