Ingredients for Cheesy Chicken with Grilled Peppers and Onion Recipe

  • Boneless chicken breasts 2

  • Parmesan cheese powder 2 teaspoons

  • Processed cheese grated ¼ cup

  • Capsicum diced 1 cup

  • Onion quartered and layers separated 1 medium

  • Garlic chopped 1 tablespoon

  • Red chilli flakes 1 teaspoon + a pinch

  • Dried mixed herbs 1 teaspoon

  • Crushed black peppercorns to taste

  • Fresh cream 1 tablespoon

  • Mayonnaise 1 teaspoon

  • Salt to taste

  • Olive oil 3 tablespoons + for grilling

  • Bread crumbs 1 tablespoon

  • Fresh coriander leaves chopped for garnishing


Step 1

Put garlic, Parmesan cheese, processed cheese, 1 teaspoon red chilli flakes, mixed herbs, crushed peppercorns, cream, mayonnaise and salt in a bowl. Add 3 tablespoons olive oil slowly and mix well. Add breadcrumbs and mix again.

Step 2

Add chicken breasts and mix well. Set aside to marinate for 20-25 minutes.

Step 3

Preheat oven to 180°C.

Step 4

Place marinated chicken on a baking tray. Pour leftover marinade on top and place the tray in the preheated oven. Bake for 12-15 minutes.

Step 5

Heat some olive oil in a non-stick grill pan. Add onion, capsicums, salt, crushed peppercorns and pinch of red chilli flakes on top and grill till evenly done.

Step 6

Place chicken on a serving plate. Place the grilled vegetables along and serve immediately garnished with coriander leaves.
