A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ingredients for Carrot and Apricot Sabzi Recipe

  • Carrots 2 medium

  • Golden apricots 8-10

  • Ginger 1 inch pie

  • Butter 1 tablespoon

  • Shallots 10-12

  • Salt to taste

  • Nutmeg powder a little

  • Red chilli flakes 1/2 teaspoons

  • Lemon 1/2


Step 1

Slice carrots into roundels. Slice ginger and chop golden apricots.

Step 2

Heat butter in a non stick pan, add shallots, ginger, carrot and apricots and mix.

Step 3

Add salt and ¼ cup water and mix. Cook till carrot gets cooked.

Step 4

Grate a little nutmeg into the pan and mix. Cook till the water is absorbed.

Step 5

Add crushed red chillies and mix. Squeeze the juice of ½ lemon and add.

Step 6

Mix well and serve hot.
