Ingredients for C Salad with Cranberry Vinaigrette Recipe

  • Cucumbers peeled, seeded and cut into cubes 2 medium

  • Cherry tomatoes halved 10-12

  • Cabbage leaves shredded 4-5

  • Red cabbage leaves shredded 4-5

  • Boiled corn kernels 1/4 cup

  • Carrot peeled and cut into thin strips 1 medium

  • Green capsicum cut into thin strips 1 small

  • Californian grapes 6-8

  • For Cranberry vinaigrette

  • Dried cranberries 1/2 cup

  • Sugar 2 teaspoon

  • Vinegar 1/2 tablespoon

  • Mustard paste 1/2 teaspoon

  • Crushed black peppercorns 1/4 teaspoon

  • Salt to taste

  • Olive oil 2 tablespoons


Step 1

Combine cucumber, cherry tomatoes, cabbage, red cabbage, corn, carrot, capsicum and grapes in a bowl and chill in a refrigerator.

Step 2

To make cranberry vinaigrette, cook cranberries with sugar and one cup of water in a non-stick pan till they become pulpy. Remove from heat, cool and strain.

Step 3

Add vinegar, mustard paste, crushed peppercorns and salt to the cranberries and whisk well. Add olive oil and whisk well.

Step 4

Drizzle cranberry vinaigrette over the chilled vegetables and toss well.

Step 5

Serve chilled.
