The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Burritos Recipe

  • Refined flour tortillas 4

  • Chicken 1 tablespoon

  • Boneless chicken breasts sliced thinly 2

  • Arrabiata sauce 2 tablespoon

  • Cooked rice 1 cup

  • Lemon 1

  • Iceberg lettuce leaves a few

  • Processed cheese grated 4 tablespoons

  • For salsa

  • Tomatoes 2 medium

  • Onion 1 medium

  • Fresh coriander leaves 3 tablespoons

  • Jalapeno 1

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

Method

Step 1

Heat tortillas lightly on non stick tawa.

Step 2

For salsa crush together tomatoes, onion, coriander leaves, jalapeno, salt and pepper powder in a chopper.

Step 3

Heat extra virgin olive oil in a non stick pan, place the chicken slices and sauté till chicken is cooked. Add arabiata sauce and mix.

Step 4

Place a few chicken slices on each tortilla in single layer, place a layer of rice alongside, put some salsa over them, squeeze and sprinkle the juice of lemon.

Step 5

Shred some lettuce and sprinkle over them, as also cheese.

Step 6

Roll the tortillas tightly and then roll in aluminium foil. Seal the 2 ends.

Step 7

This can be taken to school or office for tiffin.

Step 8

You can eat it at room temperature or heat it up in oven and have it.
