The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Breakfast Nacho Tortilla Recipe

  • Nacho Chips 12-15

  • Tortillas 4

  • Oil 2-3 tablespoons

  • Onion chopped 1 medium

  • Tomato concasse 1½ cups

  • Salt to taste

  • Paprika powder 1 teaspoon

  • Cayenne pepper 1 teaspoon

  • Cumin powder 1 teaspoon

  • Crushed black peppercorns 1 teaspoon

  • Sugar ½ teaspoon

  • Red chilli sauce 3-4 tablespoons

  • Jalapenos 1-2

  • Cheddar cheese 100 grams

  • Capsicum cut into juliennes 1 medium

  • Yellow bell pepper cut into juliennes 1 medium

  • Chicken boiled 1 cup

  • Cheese spread ½ cup

  • Sour cream ½ cup

Method

Step 1

Heat oil in a non-stick pan, add onion and sauté till translucent. Add tomato concasse, salt, paprika powder, cayenne pepper, cumin powder, half the crushed black peppercorns and sugar and mix. Cook for one to two minutes.

Step 2

Add some water and mix, add red chilli sauce, remaining crushed black peppercorns and cook till it gets thick and the water has evaporated.

Step 3

Chop the jalapenos.

Step 4

Take one tortilla at a time, spread the prepared sauce evenly and grate some cheese over it. Place some capsicum, yellow bell pepper, jalapenos and boiled chicken on one side of the tortilla.

Step 5

Mix cheese spread and sour cream in a bowl and drizzle on the tortilla. Arrange some nacho chips over it and fold it into half.

Step 6

Place the folded tortilla in a sandwich griller and cook till there are grill marks over it and it is crisp.

Step 7

Place them on a serving platter and serve hot.
