Ingredients for Breakfast Buns Recipe

  • Buns 4

  • Eggs 8

  • Onions 4

  • Salt to taste

  • crushed red chillies 2 teaspoons

  • black pepper powder 2 teaspoons

  • Few sprigs of fresh thyme

  • oil 12 tablespoons

  • tomatoes 2 medium

  • cheese slices 4

Method

Step 1

For each portion, roughly chop 1 onion and put into a chopper. Add 2 eggs, salt, ½ tsp crushed red chillies, ½ tsp black pepper powder, a little fresh thyme and process.

Step 2

Heat 2 tbsps oil in a non-stick pan and place a round ring in it. Pour the egg mixture into the ring and let it cook.

Step 3

Halve 1 bun. Heat 1 tbsp oil in another non-stick pan and place the bun, cut side facing down, in the pan and cook till golden.

Step 4

Cut tomatoes into round slices.

Step 5

Place the base half of the bun in a serving plate, place some tomato slices on it.

Step 6

Gently remove the ring from the first pan and flip the omelette. Cook the other side similarly.

Step 7

Once the omelette is done, place it over the tomato slices. Place a cheese slice over it and cover with the upper half of the bun. Serve immediately.
