Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Bread Pudla Recipe

  • White Bread Slices 8-10

  • Gram Flour 1 1/2 cups

  • Asafoetida a pinch

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Oil to shallow fry

  • Fresh coriander leaves as required

  • Red chilli Garlic Chutney as required

  • Sweet tamarind chutney as required

Method

Step 1

Combine gram flour, asafoetida, salt and red chilli powder in a bowl. Add sufficient water and whisk well to make a smooth batter of coating consistency.

Step 2

Heat oil on a non-stick tawa. Dip the bread slices, one-by-one, in the batter and place on the tawa. Sprinkle coriander leaves on top and shallow-fry till golden and crisp from both sides.

Step 3

Cut into triangles and serve hot with red chilli-garlic chutney and sweet tamarind chutney.
