Ingredients for Banana Leaf Chicken Recipe

  • Boneless chicken 2

  • Banana leaf 8 pieces

  • Lemon juice 4 tablespoons

  • Salt to taste

  • Crushed black peppercorns to taste

  • Garlic cloves 6-8

  • Green chillies 3

  • Cumin seeds 3 teaspoons

  • Scraped coconut ½ cup

  • Fresh coriander leaves 1 cup

  • Oil 1 tablespoon


Step 1

Slit chicken breast horizontally into halves and further cut into halves. Place on a plate. Sprinkle 2 tablespoons lemon juice, salt and crushed peppercorns on top and rub well. Set aside to marinate.

Step 2

Discard the veins of the banana leaves.

Step 3

Grind together garlic, green chillies and cumin seeds. Add coconut and coriander leaves and grind again into a smooth mixture.

Step 4

Take a banana leaf piece and spread some ground coconut mixture in the center. Place a marinated chicken piece on it and spread some more coconut mixture on it. Fold in the ends to cover the chicken pieces and make into a parcel. Prepare remaining parcels similarly.

Step 5

Heat oil in a non-stick pan. Place parcels on it, folded side down, and cook for 5-6 minutes. Flip and cook further for 4-5 minutes.

Step 6

Serve hot.
