Ingredients for Baked Onions With Sun Dried Tomatoes Recipe

  • Pearl onions peeled 500 grams

  • Sundried Tomatoes chopped 8-10

  • Olive oil 1 tablespoon

  • Garlic crushed 8 cloves

  • Baby potatoes boiled and peeled , halved 10

  • Fresh rosemary 1/2 spring

  • Salt to taste

  • Black peppercorns crushed 1 teaspoon

  • Fresh bread crumbs 1/2 cup

  • Fresh parsley chopped 2 tablespoons


Step 1

Preheat oven to 180° C. Heat olive oil in a pan and sauté garlic for half a minute. Gently toss onions, potatoes, adding fresh rosemary and sun dried tomatoes.

Step 2

Add salt and crushed peppercorns. Transfer into a baking dish. Top with fresh breadcrumbs and parsley. Bake at 180°C for twenty to twenty five minutes.

Step 3

Serve hot.
